After learning his culinary passion of addiction in Central Italy, Executive Chef Luca Mancini established himself with 1 Michelin star in southern Italy - "La pernice e la gallina," a restaurant that debuted in 2000 and was voted “the upcoming restaurant to watch” in Italy. Luca expanded his culinary expertise in Asia under luxury hotels & resorts such as JW Marriott and Anantara in Phuket, Thailand.
“Dining out is one of my main sources of inspiration – talking to other chefs about new flavour combinations and cooking methods, and then adapting them to the great ingredients Thailand offers.
“I work by the “farm-to-table” philosophy – heading to the local markets to find seasonal produce. Quickly flashing them in a hot wok retains the integrity of the ingredients and makes for great-tasting food.
